Referred to a Strain of S. cerevisiae can be obtained by a procedure of hybridization or mutation of the Industrial Strain of S. cerevisiae whose Deposit Number is 1 - 4341, characterised in that said method comprises a step of mutagenesis of the Industrial strain and a et APA Mutant selection.This strain is useful for the production of Yeast and Bakery osmotolerantes that have an intrinsic resistance to weak organic acids.
