The device (10) has two separating units to separate breast fillets hanging down on both sides of breast bone of carcass, from breast bone. The separating units enter a gap (16) between guiding elements (14,15) of carcass guiding unit (13) from below, such that separating units protrude upwardly beyond guiding unit in carcass direction. The guiding elements are pivoted out of guiding position into waiting position to increase distance (A) from separating units, and vice versa. A spreading element is provided to spread breast fillets away from breast bone during separating operation. An independent claim is included for method for completely separating from carcass of gutted poultry body breast fillets.
