The method involves measuring the steam pressure of the evaporated water as a manipulated variable at a position in or at the material. The steam pressure is set as the control value depending on the measurement result of the heating temperature. The steam pressure is measured at different positions in or on the material. The highest steam pressure measured in the different positions is used as the reference variable for influencing the heating temperature as manipulated variable. Independent claims are included for the following: (1) a drying unit for use in a high temperature system for drying formed water-containing material, particularly concrete, by heating the material; (2) a high temperature system with an oven; and (3) a method for manufacturing a high temperature system.
