The present invention relates to a method for manufacturing cellophane noodles, and the method for manufacturing cellophane noodles according to the present invention comprises the steps of: making paste from a mixture including starch, cellulose ether, and water; making the paste into noodle strips; refrigerating the made noodle strips; and drying the refrigerated noodle strips, followed by commercialization. The cellophane noodles can realize the texture similar to that of the conventional cellophane noodles even without passing through freezing and thawing procedures by containing the cellulose ether.
