The present invention relates to a method for extracting peptides from a defatted soybean meal. The method of the present invention comprises the steps of: leaching proteins, oligosaccharides, isoflavones, and saponins (a first step); separating [the proteins, the oligosaccharides, the isoflavones, and the saponins] from the non-soluble fiber (a second step); separating [the oligosaccharides, the isoflavones, and the saponins] from the proteins (a third step); increasing the purity of the proteins obtained in the third step (a fourth step); obtaining a low molecular weight peptide solution from the protein obtained in the fourth step (a fifth step); separating peptides having low molecular weight from undegraded proteins having high molecular weight (a sixth step); separating inorganic salts from a solution obtained in the sixth step (a seventh step); separating [the isoflavones and the saponins] from the low molecular weight peptide solution from which the inorganic salts are separated (an eighth step); concentrating the low molecular weight peptide solution (a ninth step); separating [the isoflavones and the saponins] from an oligosaccharide-isoflavone-saponin solution obtained in the third step (a tenth step); and mixing the oligosaccharide solution with the low molecular weight peptide solution obtained in the ninth step.;COPYRIGHT KIPO 2014
