The present invention relates to a method for cheaply producing a Lactobacillus product which is used as an inoculum-organism liquid required in the production of fermented soybean meal by the liquid-phase culturing of a Lactobacillus to a high concentration, using a soybean meal liquid extract generated as a byproduct in the process of producing a soybean-protein concentrate product, and which also can be utilised industrially such as in the agricultural, livestock and fishing industries. More particularly, the invention relates to: a method for extracting soybean meal adapted so as to increase the protein content and remove antinutritional factors in a Lactobacillus product, and such that the liquid extract has an optimal microbe culture medium component; a method for screening for a Lactobacillus exhibiting a high degree of growth in the liquid extract; a Lactobacillus exhibiting a high specific growth rate in the liquid extract, detected and sorted by means of the method, and a method for culturing the Lactobacillus to a high concentration in the soybean meal liquid extract; a method for soybean-meal solid-phase fermentation by using the Lactobacillus; and a method in which the Lactobacillus is used in order to make a practical product. The culturing method for Lactobacillus using the soybean meal liquid extract according to the present invention is adapted such that fermented soybean meal of optimised quality can be produced within a relatively short time, and is adapted such that a large volume of Lactobacilli can be obtained through a straightforward separate culturing process.
