The present invention provides a method for manufacturing smoked barbecue from lean meat of poultry using a capsule and a net and smoked barbecue sausage manufactured by using the same, which can make only lean meat of poultry, in which bones are removed, into smoked barbeque having the shape of a loaf to manufacture sliced smoked barbeque in a suitable size and shape. According to a preferred embodiment of the present invention, a method for manufacturing smoked barbecue from lean meat of poultry using a capsule and a net comprises the steps of: removing wings from the body of poultry, separating body bones and leg bones, and removing fat to acquire the lean meat, and mixing the lean meat with seasoning source; rolling the lean meat and filling, with the lean meat, a lean meat capsule having one side closed and the other side with a discharge port opened; putting the lean meat capsule into a collecting net and primarily tying the collecting net at a position close to the discharge port; taking the lean meat out of the lean meat capsule through the discharge port of the collecting net to leave the lean meat in the collecting net, and pulling the lean meat capsule out of the collecting net; secondarily tying the collecting net, from which the lean meat capsule is removed, at a position close to the lean meat; and performing common smoking or barbeque of entirely cooking the lean meat tied by the collecting net by high-temperature smoke or at high temperatures.
