The tofu in a film packaging introduced into a gastight, closable pasteurizing system with a back pressure, is claimed. The system: is filled with water; includes a steam-powered pressure vessel, which is configured for thermal treatment of substances at high pressure; and is turned on, heated to a water temperature or a boiler temperature of 110[deg] C and operated at a pressure of 1-2 bars. The boiler temperature is maintained until the tofu reaches to an internal temperature of 104-115[deg] C. The boiler temperature and the internal temperature are further maintained for 30-50 minutes. The tofu in a film packaging introduced into a gastight, closable pasteurizing system with a back pressure, is claimed. The system: is filled with water; includes a steam-powered pressure vessel, which is configured for thermal treatment of substances at high pressure; and is turned on, heated to a water temperature or a boiler temperature of 110[deg] C and operated at a pressure of 1-2 bars. The boiler temperature is maintained until the tofu reaches to an internal temperature of 104-115[deg] C. The boiler temperature and the internal temperature are further maintained for 30-50 minutes, and a cooling process is carried out under pressure until the internal temperature is reached to less than 80[deg] C. An independent claim is included for a method for extending the shelf life of tofu.
