System for drying fermentation residues, preferably from biogas plants, comprises (a) a hot water cycle, (b) a heat exchanger (WT) with at least one pipe system (RG1), (c) a low temperature evaporator (NV) with a first hot water device, a high temperature evaporator (HV) with a second hot water device, and (c) at least one device for producing a vacuum in the entire system. An independent claim is also included for drying fermentation residues comprising pumping the fermentation residues through a first pipe system of a heat exchanger and heating, supplying the fermentation residues from the heat exchanger to a low temperature evaporator, and further heating, supplying the fermentation residues from the low temperature evaporator to a high temperature evaporator and further heating, and hermetically discharging the dried fermentation residues from the high temperature evaporator.
