PROBLEM TO BE SOLVED: To provide a method capable of reducing imidazole by a simple method without damaging appearance and flavor even after storage, and food and drink in which the content of an imidazole derivative is reduced.SOLUTION: Provided is a method for reducing an imidazole derivative where coffee, caramel pigment, caramel pigment-containing food and drink, beers produced from malt or food and drink such as soy sauce containing an imidazole derivative represented by formula (I) and acid clay are subjected to clay treatment of being contacted at the pH of 1 to 10, and thereafter, centrifugal separation is performed to reduce the content of the imidazole derivative.
