PROBLEM TO BE SOLVED: To provide a method for producing a yeast using xylose to produce ethanol with high efficiency, without using a gene recombinant technology.SOLUTION: An ethanologenic yeast having xylose utilization ability comprising the following (a)-(c) is produced: (a) a step of aerobically culturing the yeast which belongs to Kluyveromyces with the culture medium containing 5-30 mM of an iron sa (b) a step of isolating the iron-tolerant mutant of the yeast which is grown in the step (a); and (c) a step of selecting the iron-tolerant mutant of the yeast of which the ethanol concentration in the culture medium when culturing the iron-tolerant mutant of the yeast isolated in the step (b) with the culture medium containing xylose as a carbon source for 48 to 72 hours is 1.5 or more times of the ethanol concentration in the culture medium when culturing the yeast used for the culture of the step (a) for 48 to 72 hours.
