PROBLEM TO BE SOLVED: To provide a processing method of edible tea leaf capable of processing a raw tea leaf to an edible tea leaf which can be stored in long period, while maintaining flavor and color unique to the raw tea leaf, and the edible tea leaf.;SOLUTION: A raw tea leaf is immersed for a predetermined time in active hydrogen water, then the active hydrogen water is wiped off, and the raw tea leaf subjected to processing using the active hydrogen water is subjected to addition of antiseptic or germicidal treatment. Then the tea leaf is stored at a cold place of 5°C-10°C for a predetermined time, then the tea leaf is packed by vacuum packing. The raw tea leaf processed by the active hydrogen water is crumpled with sodium chloride, as the addition of antiseptic and germicidal treatment.;COPYRIGHT: (C)2015,JPO&INPIT
