PROBLEM TO BE SOLVED: To provide a dry state monitoring device for a freeze dryer that can monitor the dry state of a dried material in a primary dry step and a secondary dry step without using a temperature sensor, and can perfectly eliminate the risk that the dried material collapses, and provide a dry state monitoring method.;SOLUTION: A sequencer PLC controls dry chamber vacuum Pdc to a setting value in both of a primary dry step and a secondary dry step, and calculates a sublimation speed Qm (dehumidification speed Qm' in the secondary dry step), an average bottom component temperature Tb and an average sublimation surface temperature Ts in this order.
