PROBLEM TO BE SOLVED: To provide a snack excellent for health maintenance, having sufficient palatability as the side dish of a meal, alcoholic drink, and tea so as to cause good appetite for the snack, capable of preventing a wide variety of diseases.;SOLUTION: A lateral root 1B of rhubarb grown to a proper size is washed and immersed in an alkali aqueous solution with a specified concentration and in a saline solution with a specified concentration, so that bitter components and traditional Chinese medicine components are diluted. The lateral root 1B is then boiled or fried with a seasoning, or applied with a seasoning 5A so as to be baked.
