PROBLEM TO BE SOLVED: To provide a nutrient food material easy to eat by excellent palate feeling and improved fish odor, using non-edible parts richly containing nutrient such as calcium, mineral/vitamin and DHA, such as head, bone and skin excluding flesh parts of fish such as tuna, to provide a method for producing the nutrient food material, and to provide processed food.SOLUTION: This nutrient food material is obtained by molding a mixture by mixing a pasty pulverized product made by pulverizing remaining parts including head, bone and skin excluding fish flesh parts, and added with a fish odor suppressing material, and a fish flesh part added with salt, and if necessary, addedly mixing vegetables and seasoning to the mixture, and heating the mixture followed by cooling. Especially, the food material which is obtained by addedly mixing trehalose at 1-3% mass ratio and sugarcane extract at 0.01-2% mass ratio with the pasty pulverized product made by pulverizing remaining parts excluding tuna and swordfish flesh parts, and mixing the product with tuna and swordfish flesh parts ground with salt so as to bring the mass ratio of the pasty pulverized product to 20-40% is improved in odor and excellent in palate feeling.
