PROBLEM TO BE SOLVED: To provide a means for calculating a solid concentration of concentrated milk and to stably manufacture concentrated milk by controlling a concentration condition of concentrated milk using the same.;SOLUTION: The device for measuring a solid concentration of concentrated milk includes a temperature measuring means to measure a temperature of concentrated milk, a viscosity measuring means to measure viscosity of the concentrated milk, and a solid concentration calculating means to calculate the solid concentration of concentrated milk based on the outputs from the temperature measuring means and the viscosity measuring means, and the method for manufacturing concentrated milk includes the steps of calculating the solid concentration of the concentrated milk by a correlation equation from the measured results of temperature and viscosity of concentrated milk, and manufacturing the concentrated milk by controlling concentration conditions in response to the solid concentration.;COPYRIGHT: (C)2012,JPO&INPIT
