Exemplary embodiments of the present disclosure are directed towards methods for processing cashew apples to obtain different value added products such as syrup of cashew apples, ready-to-drink juice of cashew apples, carbonated cashew apple juice and cashew apple powder that can be preserved for a longer duration of time. The nutritional, medicinal and economic benefits of cashew apples are utilised to their full extent by such processing methods that are otherwise lost due to the highly perishable nature of cashew apples and their astringent taste.
