Described is the process for extracting, recovering and purifying ellagitannins from the pomegranate peel by means of water, ethanol and a separation resin. The water acts as an extractor agent, since the ellagitannins present in the pomegranate peel are water soluble, the ethanol allowing the ellagitannins to be recovered after performing a column chromatography of liquids, which is filled with resin. The process starts with the dehydration and mill of the pomegranate peels, these are dehydrated at 60°C for 48 hours and their particles are reduced; the extraction is performed in a mass/volume ratio of 1:5 (1 part of dehydrated and milled material by 5 parts of water) at a temperature of 60°C for 30 minutes, the extract being filtrated for obtaining the aqueous part, which is centrifuged at 3000 rpm for 15 minutes. A column with the resin is packed and the non-desired material is removed, a second elution with ethanol is prepared for recovering the ellagitannin fraction separated by t he resin action. The residual ethanol is subsequently evaporated at a temperature of 60°C for recovering the ellagitannins in the form of a fine powder.
