The present invention comprises processes for the obtention of enzymatic hydrolysates of Cocos nucifera L., widely used as an attractant, food, ingredient or food additive for land and marine animals. The variation of the enzyme type, enzyme level, and concentration of coconut paste, hydrolysis time and physicochemical and environmental conditions in the process allows coconut paste hydrolysates to be obtained with different properties and hydrolysis degrees according to the needs of the client. The polysaccharides hydrolysis allows fiber to be reduced and soluble carbohydrates increased. The proteolytic hydrolysis allows the level of peptides of low molecular weight and free amino acids to be increased, potentially increasing the attractive property, palatability, digestibility and utilization of the food.
