A method for processing sugar beet Beta vulgaris L. to the food usable of the sugar-fibrous product, consisting in that the raw material is treated with from 0.015 to 3.0% by weight. metabisulfite solution (Na2S2C 5) and/or with other food suitable sulphite in equivalent amount in the conversion of the sulfur dioxide and diluted with water in a ratio of dry weight: water of from 1: 1 to 1: 10, then adjusting the sensory desodorisation mixture at a pressure of 102 kPa to 150 kPa, by heating at 102 � C to 124 � C where it was maintained for 2 to 60 minutes, and after the completion of the removal of water from the mixture to form a paste or solid. Preferably, the mixture after the addition of the sulfite in an oven with air, when the relative humidity drops to 1.0% to 14.5%. The treated, dried material is homogenized by grinding into a powder with particle size below 3.0 mm. The fibrous product of a sugar-containing pectin and hemicellulose, and/or sucrose and/or glucose and fructose in an amount of at least 40% by weight. in dry matter and moisture content of a maximum of 45% by weight.
