Process for manufacturing a sweet cheese product having a dry extract of between 30% and 60% and comprising a mixture of a processed cheese and at least one cereal, said process comprising the steps of: a) heat treating at a temperature between 80 and 145C for 3 s to 6 min, a mixture comprising, by weight relative to the total weight of the mixture: - 3% to 40% protein of dairy origin; - 10% to 30% fat; - 5% to 15% sugar; - 0.1% to 3% emulsifier and / or texturizer; - 0.1% to 0.5% of an acid; - water, and - 3% to 15% of at least one cereal, said incorporated mixture into flour and / or cooked cereal hydrated form; b) conditioning the hot heat treated mixture at a temperature between 70 and 100; c) cooling to a temperature between 5 ° C and 15 ° C.
