The subject invention herein relates to the novel use of computed tomography (CT) for monitoring processes cold preservation and cryopreservation of biological material. The use of TAC significantly improves these processes due to its ability to detect the concentration of cryoprotectant in the process of cryopreservation and detection of ice formation in biological samples. # The present invention falls within the field of research or analysis materials by determining their chemical or physical properties, and within it is of interest both in conventional food preservation and cryopreservation of biological material of all kinds (both slow freezing, rapid vitrification or other).
