Process for preparing maltitol crystals by evaporative crystallization, characterized in that it consists of a) preparing a solution of maltitol of at least 85% richness in maltitol in dry base, preferably between 89% and 99% richness in maltitol in dry base , even more preferably comprised between 93% and 95% of dry maltitol richness, b) concentrate in partial vacuum between 20 and 30 kPa said maltitol solution, of richness between 93 and 95%, at a cooking temperature comprised between 75 and 85%, in the evaporative crystallizer so as to obtain a maltitol syrup whose degree of supersaturation in maltitol is located in the metastable zone of maltitol, c) sow the solution supersaturated in maltitol with seed crystals of maltitol in the form dispersed, d) carry out the crystallization for a total time of less than 2 hours, keeping constant the degree of supersaturation in maltitol in the area metastable thereof by controlling the temperature between 70 and 85 ° C, strong agitation by pumping the evaporation vapors, by successive steps constituted by a concentration phase by external evaporation, then a resting phase called condensation (evaporation internal), at a constant global concentration, and feed the maltitol syrup to crystallize, e) recover the crystals thus obtained.
