The present invention relates to a method for preparing fine powders of Hericium erinaceum and to natural seasonings comprising the same. According to the preparation method of the present invention, fine powders of Hericium erinaceum have improved moisture capability, moisture absorption, bulk density, and swelling power compared to powders prepared by an existing method, and can easily extract effective components such as proteins and polysaccharide from Hericium erinaceum. Also, when mixing proper additives with fine powders of Hericium erinaceum prepared by the method, the present invention can be used as an excellent natural seasoning.
