The present invention relates to a recipe for shrimp sushi having a grilled taste providing a new and unique chewy texture obtained by the harmony of a unique taste of a raw shrimp and a grilled taste by providing the grilled taste capable of being obtained when cooking food with direct fire to the sushi with a rare shrimp parboiled in hot water. The recipe for shrimp sushi is composed of a first step of making sushi; a second step of preparing a shrimp by parboiling the shrimp in hot water; a third step of adding a sauce for grilling on the shrimp after putting the shrimp prepared in the second step on wasabi put on the sushi prepared in the first step and grilling the shrimp with the sauce by using flames of a torch; and a fourth step of adding an eel-based sauce and a white sauce on the sauce for grilling grilled in the third step.
