The present invention relates to a method for simultaneously producing immuno-stimulating polysaccharide and aglycone flavonoid derived from citrus-processed byproduct, the method comprising the steps of: enzymatically treating a processed byproduct of citrus fruits of the genus Citrus; and centrifuging the enzymatically treated citrus-processed byproduct, wherein the immuno-stimulating polysaccharide is produced from the centrifuged supernatant, and the aglycone flavonoid is produced from the centrifuged precipitate. The immuno-stimulating polysaccharide produced according to the present invention exhibits anti-complement activity of 45% or more at a concentration of 1,000 g/ml, and has excellent abilities to stimulate the proliferation of lymphocytes and the production of macrophage cytokines (IL-6 and IL-12) production and activate natural killer cells.
