The present invention relates to: fermentation conditions for increasing S-allyl cysteine content of garlic; a technology for manufacturing a feed additive composition using the same; and a use thereof. The composition for increasing the S-allyl cysteine content of garlic includes one or more strains from Leuconostoc mesenteroides KCCM 11324 and KCCM35046 as active ingredients. The present invention provides a method for increasing the S-allyl cysteine content of garlic, including a step of fermenting garlic by using one or more strains from Leuconostoc mesenteroides KCCM 11324 and KCCM35046 as starter strains.
