The present invention relates to a method for manufacturing fermented soybean paste using sap comprising: (a) a step for preparing boiled soybean lumps by boiling soaked soybeans, mashing and making the boiled soybeans into lumps, and then drying and fermenting the soybean lumps; (b) a step for aging a mixture consisting of Acer mono sap, Cornus controversa sap, and brine; (c) a step for putting the soybean lumps prepared in the step (a) and the mixture aged in the step (b) in a jar and then fermenting together; and (d) a step for mixing the soybean paste remained after separating a soy sauce from the fermented mixture with the aged mixture of the step (b) and soybean powder, and then aging the mixture, and to the fermented soybean paste manufactured by the method.
