The present invention relates to a method for producing fermented bamboo salt and fermented bamboo salt produced by the same and, more specifically, to a method producing fermented bamboo salt which can contribute to the provision of salt, which is beneficial to people, and healthy food by producing bamboo salt through a fermenting step of neutralizing and removing impurities contained in salt and improving antioxidant activity by activating beneficial substances, and a plasticizing step of removing remaining impurities secondarily, and to fermented bamboo salt produced by the same. The method for producing bamboo salt according to the present invention comprises: a fermented rice bran producing step for producing fermented rice bran by mixing a zymogen and rice bran and fermenting the mixture, wherein the same amount of photosynthetic bacteria, lactic acid bacteria, Bacillus subtilis, and yeast fungus are blended in the zymogen (S10); a mixed salt producing step of producing mixed salt by uniformly mixing the produced fermented rice bran and bay salt (S20); a filling and sealing ripening step of filling a prepared bamboo container with the produced mixed salt, sealing the opening of the bamboo container with red clay dough, and ripening the salt (S30); and a fermented bamboo salt producing step of producing bamboo salt by plasticizing the bamboo container (S40).;COPYRIGHT KIPO 2015
