The present invention relates to a manufacturing method of a dried squid using red clay water comprising minerals. More specifically, provided is a manufacturing method of a dried squid using red clay water comprising minerals, wherein a mineral material in ring form for mixing red clay, sericite, barley stone, and plum rock and treating at high temperatures is dissolved in production water and concentrated water produced through a desalination process in water quality control of deep ocean water, respectively, so as to use the generated red clay water in a manufacturing method of squid. Therefore, the method has effects in maintaining water soluble protein ingredients contained in squid, maintaining high moisture contents of squid as using red clay water comprising concentrated water in immersion process, preventing alteration in accordance with storage at room temperature and time, and maintaining smooth meatiness and unique taste, smell, and color of squid.
