The present invention relates to a composition for preventing browning of button mushroom containing an extract of peel of Diospyros kaki. The water of Diospyros kaki of the present invention has excellent effect of inhibiting activity of polyphenol oxidase causing browning of the surface which is a main factor causing quality degradation of button mushroom, thereby being effective to prevent browning of button mushroom during storage.
