The present invention relates to a composition for preventing browning of button mushroom containing an extract of peel of Cucumis melo. The water of Cucumis melo has excellent effect of inhibiting activity of polyphenoloxidase causing browning of the surface which is a main factor causing quality degradation of button mushroom, thereby being effective to prevent browning of button mushroom during storage.;COPYRIGHT KIPO 2015
