The present invention relates to a sweet and sour chicken including ginseng and a manufacturing method of a sweet and sour chicken including ginseng. The manufacturing method of a sweet and sour chicken including ginseng according to one embodiment of the present invention comprises: a step for cutting a chicken at a predetermined size; a step for producing a source by mixing onion, pepper and garlic into ginseng decoction water; a step for mixing the cut chicken with the mixed solution and aging (the mixed solution includes ginseng decoction water, onion, pepper and garlic); a step for frying the aged chicken with batter; and a step for spreading the source on the fried chicken.
