The present invention relates to a method for producing a pork cutlet-type soybean processed food using dried fruits. More specifically, the method comprises a hydrating step of hydrating tissue soybean proteins in water; a dehydrating step of removing moisture from the hydrated tissue soybean proteins; a beating step of adding and rotating the dehydrated tissue soybean proteins in a dough mixer; a mixing step of mixing the beaten tissue soybean proteins with dried fruits, soybean oil, whey proteins, gluten, grain powder, mate powder, seasonings, and nuts as mixing ingredients; a molding step of charging the mixture in a mold using a vacuum charger; and a heating step of steaming the molded product. By means of the present invention, a pork cutlet-type processed food having a meat texture and a novel flavor is developed using tissue soybean proteins and dried fruits, so that men and women of all ages can easily consume the same without being repulsed thereby. Accordingly, meat consumption can be reduced, and the consumption of vegetable proteins can be increased, so that fruits can be easily eaten. Furthermore, tissue soybean proteins are used as main ingredients so that a processed food can be provided at a stable cost instead of meat having severe price fluctuations. Because dried fruits are used, the nutritional value of a pork cutlet-type meat substitute can be increased.
