The method (M) for analysing aflatoxins in milk and milk by-products comprises:- a homogenization phase (B) of a milk or milk by-product sample to be analysed;- an extraction phase (C) from the homogenized sample of an extract containing aflatoxin;- a competition phase (D) between the extract and an antibody-dye conjugate for obtaining a mix to be analysed wherein the reaction between the aflatoxin and the antibody-dye conjugate is at least partially completed;- a chromatography phase (E) of the mix by means of a chromatographic device (1) of the type of a lateral-flow device or the like;- a qualitative and/or quantitative reading phase (F) of the results found by the chromatographic device (1), wherein the qualitative reading comprises the detection of the presence or not in the sample of a quantity of aflatoxin higher than a pre-determined minimum threshold level, and wherein the quantitative reading comprises the measurement of the quantity of aflatoxin present in the sample.
