PROBLEM TO BE SOLVED: To provide a quality improvement agent of an egg heating processed food capable of improving texture, appearance and taste and flavor of egg heating processed food only by adding it during manufacturing egg heating processed food and applicable to manufacturing egg heating processed food in an industrial scale, a quality improvement method of the egg heating processed food using the quality improvement agent of the egg heating processed food and a discoloration prevention method of the egg heating processed food.SOLUTION: There are provided a quality improvement agent of an egg heating processed food containing sodium hydrogen carbonate and gluconodeltalactone with mass ratio of 1:2 to 4, a quality improvement method for improving texture and/or appearance of the egg heating processed food by using the quality improvement agent of the egg heating processed food of 0.1 mass% to 4 mass% to the egg and a discoloration prevention method of the egg heating processed food for preventing discoloration of the egg heating processed food.SELECTED DRAWING: None
