PROBLEM TO BE SOLVED: To provide a tempura batter mix which allows easy production of tempura which has a preferable appearance having proper degree of a flower-like part which is an outermost part of batter of tempura, and has a preferable texture for a long period, regardless of skill of a cooking person.SOLUTION: There is provided a batter mix for preparing a batter for tempura production, the batter comprising: with respect to mass of the batter mix as reference, 1-6 mass% of soybean curd refuse powder, and 1-5 mass% of edible oil, in which a content of the soybean curd refuse powder to the edible oil (soybean curd refuse powder/edible oil) is 0.4-2.5, and viscosity Vis adjusted to become 750-1600 mPa s. The batter mix has a thixotropic coefficient T(T=V/V) of 0.5-1. The batter comprises 140-180 mass% of hydrolytic rate, to mass of the batter materials other than water.SELECTED DRAWING: None
