PROBLEM TO BE SOLVED: To provide fermented milk with aroma, having preferable flavor of fermented milk.SOLUTION: Provided is a fermented milk production method for adding a dried bonito extract which is extracted from a dried bonito to a fermentation raw material including milk raw material, then subjecting the mixture of the fermentation raw material and dried bonito extract to lactic fermentation, and then subjecting the mixture to low temperature aging, or a fermented milk production method for subjecting a fermentation raw material including milk raw material to lactic fermentation, adding a dried bonito extract which is extracted from a dried bonito to the fermentation product and then subjecting the mixture to low temperature aging. Therefore, aroma can be added to the fermented milk while maintaining preferable flavor of the fermented milk.
