The device (10) has a conveying device (11) e.g. endless conveyor, for continuously conveying products (12) in a conveying direction (F). A detection device (14) detects red tissue structures, and includes an optical sensor unit for recording light portions (32) that are reflected by the products. The light source is arranged such that a plane of the planar light field is bent relative to the conveying direction around a light field angle (alpha) of smaller than 90 degrees. Independent claims are also included for the following: (1) an arrangement for detaching a strip of red tissue structures from products of a slaughtered animal body (2) a method for non-contact detection of red tissue structures in products of a slaughtered animal body.
