Novelty: composition and preparation of a sugar-free carob-based snack coated with edible sodium alginate is disclosed. Production steps: 1) stirring with a blender of a mixture composed of carob flour (35%), carob honey (32%), smashed hazelnuts (23%), margarine (10%); 2) shaping of the resulted base in 7-gr balls; 3) coating of the shaped balls with edible coating via successive spraying with solutions of sodium alginate (1%) and calcium chloride (2%) ; 4) removal of the calcium chloride excess and use of air curtains; 5) second layer with edible coating by repeating the steps 3 and 4; 5) optional addition of extra tastes and aromas (e.g. essential oils) either to the base of the product or to the edible coating. Advantages: the resulted preparation exhibits high nutritional properties and low glycemic load; it is rich with dietetic fibres and trace elements.
