The present invention is related to a method for producing a nutritional beverage of amaranth from the whole seed of amaranth and not from the flour of the pop and degreased amaranth seed; the process for manufacturing the beverage is different from previous Mexican patents, with files No. 2004/6688 and 2006/013015. The obtained amaranth beverage in its liquid and powder form using the present process has improved characteristics with regard to the previous arts. The manufacture of the liquid and powder beverage uses industrial equipment for preparing from 10,000 to 100,000 liters of liquid beverage and from 1,000 kg to 10,000 kg of powder beverage during the 8 h working period. The beverage in powder has a long lasting storing life or shelf life. The nutritional beverage in powder has three times the content of protein and twice the calcium and potassium content, half amount of sodium, 9 times more phosphorus and 100 times more iron when compared to cow milk. The beverage does not co ntain cholesterol, lactose or animal origin toxins, as it is a vegetable origin product. In addition, the present invention is related to nutraceutical compositions and their use in healthy people or as a viable alternative in problems of public health such as malnutrition, cow milk lactose and casein intolerance, diabetes, overweight and obesity in Mexico.
