The invention relates to a process for preparing ethyl esters of omega-3, omega-6 and omega-9 fatty acids from refined ostrich oil. According to the invention, the process consists in that a mixture of ethyl alcohol and refined ostrich oil is heated, while stirring, up to a temperature of 65...70°C, and there is added p-toluenesulphonic acid monohydrate, possibly 30% ethanol solution of sulphuric acid, the reaction mass is kept under stirring for 3 h, there is added ethanol solution of sodium hydroxide, the reaction mass is heated under the same conditions, after which there is added water, while stirring for 30 min, and there are separated two layers, the upper layer is dried on anhydrous sodium sulphate, is filtered, further on the oily fraction is processed by crystallization, wherefrom there results a colourless to slightly yellowish oil with a relative density of 0.8892 and a refraction index of 1.4911.
