Provided are: a method for producing medium applicable to multiple species and strains in the culture of lactic acid bacteria in particular, and capable of imparting cell densification, cell stability properties such as heat resistance, and strong proliferative capacity in the low-temperature range and the high-temperature range; and a method for culturing cells using a medium obtained by said method. Carbonate and germ koji are mixed in a mixture constituting a liquid medium and sterilized separately from the other mixture. Germ koji extract; various sources of nitrogen and carbon; animal and vegetable fats and oils that contain oleic acid; polysorbate; and an iron component are mixed with a medium as the other mixture. Cells cultured in such medium have exceptional cell stability properties such as heat resistance, and also exhibit excellent yield when dried and powdered.
