The present invention relates to an effect on alpha-glucosidase inhibitory activity of a fermented extract produced by fermenting Zygosaccharomyces rouxii SCY 1502 (KCCM11537P) which is a yeast exists in sauce or paste. The present invention comprises the following steps: (1) yeast-fermenting dried and powered ingredients including mulberry leaves, Wonki 1 ho pepper leaves, bellflower root, and Allium hookeri root; (2) analyzing a content of deoxynojirimycin (DNJ) in the yeast fermented extract; and (c) assessing on the alpha-glucosidase inhibitory activity of the yeast fermented extract. The fermented extract with enhanced alpha-glucosidase inhibitory activity by using the yeast has not been developed so far, Therefore, the present invention is to provide an anti-diabetic fermented edible plant mixture.
