The present invention relates to a lotus bud-shaped cookie containing lotus leaf powder and opuntia cactus fruit powder, and a manufacturing method thereof. More specifically, the manufacturing method of a lotus bud-shaped cookie comprises: a step (1) of mixing soft flour, eggs, cooking oil, sugar, starch syrup, lotus leaf powder, baking powder, and drinking water to make dough for lotus bud supports; a step (2) of mixing soft flour, eggs, cooking oil, sugar, starch syrup, opuntia cactus fruit powder, baking powder, and drinking water to make dough for lotus flower pedals; a step (3) of mixing roasted black sesame powder, roasted bean powder, honey, and drinking water to manufacture a lotus bud-shaped cookie filling material; a step (4) of placing a circular piece of parchment paper on a lotus bud-shaped cookie shaping frame and sequentially feeding and baking the dough of the step (1), the filling material of the step (3) and nut bits, and the d ough of the step (2); and a step (5) of cooling the baked lotus bud-shaped cookie to a room temperature and then finishing the cookie with Lafage wine. The lotus bud-shaped cookie in accordance with the present invention contains functional ingredients of lotus leaves and opuntia cactus fruit to be beneficial to health, and has a lotus bud shape to appeal to consumers.
