The present invention relates to a manufacturing method of enzyme syrup made from apple peel, which comprises the following steps: dissolving sugar in water; pouring syrup obtained in the previous step into a container accommodating apple peel; and fermenting the syrup and the apple peel. According to the present invention, discarded apple peel is used so food waste can be reduced, and the enzyme syrup made from apple peel is manufactured using only a natural ingredient, thereby reducing harmful effects caused by an artificial food additive which is harmful to the human body. In addition, according to the present invention, an enzyme extracted from apple peel enhances digestion and absorption rates in the stomach and intestines of a person. Accordingly, people can easily take the enzyme syrup in the morning when the people have a poor appetite and a poor digestion.
