Provided is a method for producing a medicinal herb extract containing aromatic components. Also, provided is a medicinal herb extract containing the aromatic components. The process of the present invention is carried out at a low temperature or room temperature, thereby minimizing a loss of the aromatic components mostly made of low molecular weight molecules during the production process. In addition, mineral concentrated water used as an extraction solvent, the medicinal herb extract produced by the method contains the aromatic components and various minerals (ionized calcium, magnesium, and potassium) contained in the mineral concentrated water.
