The present invention relates to a manufacturing method of ginseng for soup and tea using a freeze drying process, which can consistently maintain the shape and ingredient of ginseng used for soup such as chicken soup with ginseng, ginseng tea, etc. The manufacturing method of ginseng for soup and tea using a freeze drying process comprises: a washing step of gathering ginseng, removing foreign substances, and washing the ginseng so that the root of the ginseng is not damaged; a slow cooling step of cooling the washed ginseng at low cooling rate so that the ginseng is cooled from room temperature to 0°C; a rapid cooling step of rapidly freezing the ginseng cooled to 0°C up to -46 to -50°C again; and a vacuum drying step of drying the frozen ginseng under vacuum conditions.;COPYRIGHT KIPO 2016
