The present invention relates to a method for manufacturing dried sweet potato which comprises the following steps: steaming peeled and washed sweet potatoes for 10-25 minutes using a mixture consisting of 75-90 wt% of purified water and 10-25 wt% of a sweet potato extract; cooling the steamed sweet potatoes at 20-35°C for 40-90 minutes, then cutting the same into slices of 5-15 mm; drying the slices of sweet potatoes with hot air at 75-95°C for 7-10 hours until the moisture content of the slices becomes 15-35%; dipping the dried slices of sweet potatoes in a mixture consisting of 75-90 wt% of purified water and 10-25 wt% of a red ginseng extract for 5-10 hours to soak the same; and spreading the soaked slices of sweet potatoes out on a tray and drying the same with hot air at 60-80°C for 10-15 hours until the moisture content of the same becomes 10-20%. According to the above, the present invention enhances a pharmacological action of sweet potatoes by adding active extracts to leaves and stem of sweet potatoes which are usually thrown out after harvest.;COPYRIGHT KIPO 2016
