The present invention relates to a method of fermenting a fermented soybean with a mixture of Aspergillus oryzae and two species of Bacillus licheniformis , Meju produced by the above production method, and food made from the above Meju, in the case of Meju according to the present invention, not only the protease activity is high but also the amino nitrogen content which can enhance the characteristic flavor of Meju It is possible to increase the preference of the consumers, and furthermore, it can be usefully used for the food development using them.
